Use CMC powder also know as Tylose powder to make an edible glue and to make modeling paste. The edible glue can be used to create and place sugar flowers and other decorations on a cake or dessert. You can add the CMC powder to fondant to create gumpaste which will make the fondant dry quicker.
CMC, Carboxymethyl cellulose, E466 or Tylose are all the same thing. CMC is the chemical version of Gum Tragacanth. It works the same but in shorter time and is a little cheaper.
To make edible glue: Dissolve 1 tsp of CMC into 1/4 cup of water, stir over heat until smooth. There may be little lumps in it, but these will dissolve, usually overnight. Leave the mixture in the fridge overnight in an airtight container. In the morning you'll find a smooth thick glue. The glue can be thinned with water if necessary and is readily used with model making and sugar flowers. It dries clear and can be used to attach all kinds of decorations to a cake or cookie depending on the confection you are making. Always practice with using this product before an event.
To make gumpaste: Add 1 - 3 tsp of CMC powder to 1 lb of fondant to create a quick version of Gumpaste.
