Snickerdoodle Pie Crust Cookies

Our snickerdoodle pie crust cookies will become a favorite to make, enjoy or gift! They give you a perfect way to use up scraps of pie crust when making a pie. You may enjoy them so much that you end up making just the cookies. In that case, store bought pie crust is perfect for this, making it a quick sweet project!

Since I wasn't making a pie to use up the scraps I used store bought pie crust that come with two in a package. All you have to do is let the crust come to room temperature so you roll them out on a piece of parchment and then cut out in the shapes you desire.

Snickerdoodle Pie Crust Cookies

1 store bought or homemade pie crust
1/2 teaspoon Bakery Emulsion, we used Buttery Sweet Dough
3 tablespoons sugar
1 teaspoon cinnamon or to taste
mini cookie cutters

Directions:

Preheat oven to 400. If you are using store bought pie crust, allow it to come to room temperature before rolling it out. They typically come two crusts to a package. If you are using both crusts, double the recipe above. If you want to make your own crust try our go to pastry dough recipe!

To add a little extra flavor to the crust I brushed 1/2 teaspoon of Sweet Dough Bakery Emulsion on the top of the pie crust that I unrolled. You could use another flavor like Butter Vanilla that would go well with the cinnamon and sugar. Emulsions are like an extract but they are water based so the flavor doesn't bake out. It added moisture to the crust for the cinnamon sugar mixture to stick.

Mix the cinnamon and sugar together in a small bowl and sprinkle over the top of the crust. Slightly press the sugar mixture into the crust a little and cut out shapes using mini cookie cutters. Place the pie crust cookies on a silicone or parchment lined baking sheet. Bake for 8-9 minutes or until lightly browned on the bottom.

TIP: The unrolled crust was just the right thickness to make the snickerdoodle pie crust cookies so you don't even need a rolling pin for this quick sweet project if using store store bought crust.

These snickerdoodle pie crust cookies are a quick and easy! A slightly sweet treat you can make to enjoy, to use as place markers for a table setting or even as hostess gifts. Make a cinnamon cream cheese dip to go with them. Oh my yum!

Ah! I LOVE pie crust cookies… they remind me of my childhood, sneaking the crispy bits from grandma’s pies. Need to try these!
