We are sharing an easy recipe for Caprese Skewers with Prosciutto that makes the perfect last minute Fourth of July appetizer or for any summer gathering! There is nothing like a fresh fresh caprese salad when tomatoes & basil when they are at their prime in the summer months here in Maine!
For the caprese skewers I thought it would be fun to use our hand-painted rock candy sticks to add some extra color! I chose mini tomatoes and fresh mozzarella pearls, then had my local deli slice the prosciutto a bit thicker than normal to help it stay in place on the skewers. Since our rock candy sticks have blunt ends, I just used a tooth pick to pierce the tomato so they slipped on the sticks with easily and very little mess. All of the other ingredients slid on with no trouble.
After placing the caprese skewers on a platter simply drizzle with a bit of your favorite aged balsamic vinegar, plus a bit of fresh ground pepper and sea salt! Since the fresh basil will begin to wilt quickly, it's recommended to make the caprese skewers just before serving to keep them looking their best.
Caprese Skewers with Prosciutto
1 pint of grape tomatoes
1 bunch of fresh basil
8 oz fresh mozzarella pearls
1/2 pound sliced prosciutto
aged balsamic vinegar, to taste
fresh ground black pepper, to taste sea salt, to taste
6 inch rock candy sticks or bamboo skewers
Slice the prosciutto in half making long strips. Fold over as shown in the photo accordion style and gently push onto your skewer. Follow that up with the tomatoes, cheese and basil, ending the caprese skewer with a mozzarella pearl to hold everything together. Place on a platter and drizzle with balsamic vinegar, then dust with fresh ground pepper and sea salt.
Makes approximately 18 skewers.
