How our cookie dough stuffed cookie's and cream rice crispy treats recipe came to be...Two of my husband’s favorite desserts are rice crispy treats and sea salt chocolate chip cookies. Well, the last time it was our turn to make dessert for a party, he came up with the idea to mix, mingle and mash them together for one pretty amazing treat! We all know that cookie dough is really the best part of making cookies, so we wanted an edible cookie dough that we could sandwich in the middle of a rice crispy treat. As if one type of cookie wasn’t enough, we also decided to toss in some crushed Oreo's in the rice crispy treats as an added bonus and to make your mouth water even more! We topped with some dark chocolate drizzle and a dash of sea salt for one pretty spectacular dessert that is going to be the talk of the party! You will want to try this yourself!
Cookies n’ Cream Rice Crispy Treats Recipe
12 oz box rice crispy cereal
1-2 cups crushed chocolate sandwich cookies (Oreo's)
1 stick of butter
2 10.5 oz bags of mini marshmallows
1 tsp vanilla extract or vanilla bean paste
Line two cookie sheets (approx. 15x10 inches) with wax or parchment paper and grease them with butter or non-stick cooking spray. In a large pot melt the butter, and then add the marshmallows. Stir constantly until the marshmallows are completely melted, then add the vanilla. Next add the cereal and crushed cookies, mix until all the cereal is completely coated. Divide the mixture in half and press evenly into each pan, cool completely.
Edible Cookie Dough Filling Recipe
1 stick of butter, softened
¾ cup brown sugar
2 tsps vanilla extract or vanilla bean paste
1 cup AP flour
¼ tsp salt
1-2 tbsp milk
1 ¼ cup mini chocolate chips
In a large bowl combine the butter, brown sugar and vanilla, mix thoroughly. Add the flour, salt and 1 tablespoon of the milk. Mix well and add more milk a little at a time if needed. Stir in the chocolate chips and you are ready to stuff your rice crispy treats!

Edible Cookie Dough
¾ cup Ghirardelli Dark Chocolate Melting Chips
Coarse sea salt (optional)
Once the rice crispy treats are completely cooled spread the cookie dough over the top of one pan of treats, right to the edges. Place the second pan of treats over the top and push down sealing the cookie dough between rice crispy treat layers. Place the treats on a large cutting board and cut into desired size. Spread the treats out a bit to prepare for the chocolate drizzle.
To decorate your treats in a quart size freezer bag melt the Ghirardelli Dark Chocolate Melting Chips per package instructions. Once melted, snip the very end of one of the bottom corners of the bag with a scissor. Drizzle the chocolate on the tops of your rice crispy treats and sprinkle with a little coarse sea salt before the chocolate hardens.
